LION DANCE ALE

Brewed with our friends at calicraft with fresh ginger and lemongrass,

we went for something crisp and meant to pair with our food -but really, it works with all spicy, rich and savory dishes far beyond Southeast Asian cuisines.

“Inspired by and designed to pair with C-Y and Shane’s food. We took two aromatic cornerstones of Singaporean cuisine: ginger and lemongrass. While ginger has been used in beer, the pairing of ginger and lemongrass is a lot less common.
Additionally, we wanted to present both in their most aromatic version - oftentimes in beer, ginger is used in its dried or candied form - a much more western take. By focusing on fresh ingredients and using minimal heat to extract flavors, we are better able to showcase the fresh, herbal qualities of both. 
The base beer is loosely modeled on Asian-adjunct lagers (such as Tiger Beer, from Singapore) - brewed with flaked rice to give a light body and dry finish.
We brewed this as an ale, which I believe lends itself to more diverse flavor profiles. 
The result is a beer that is both aromatic and specific, while being light and crushable. It has enough body to cleanse the palate, but is dry enough to cut through rich foods.
We think it will pair perfectly with the food of Lion Dance Cafe!”
